Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
- In a large bowl, beat the softened butter and granulated sugar together on medium speed until light and fluffy, about 2 minutes. Scrape down the sides.
- Beat in the egg, vanilla extract, buttermilk, red gel food coloring, and white vinegar on low speed until just combined.
- Gradually add the flour mixture to the wet ingredients, mixing on low speed until a soft, cohesive dough forms. Do not overmix.
- Let the dough rest for exactly 5 minutes.
- Sift the powdered sugar into a small bowl.
- Using a 1.5-tablespoon cookie scoop, scoop the dough and roll into balls. Roll each ball generously in the powdered sugar to coat.
- Place the coated dough balls on the prepared baking sheets, spacing them about 2 inches apart.
- Bake one sheet at a time on the center rack for 9-11 minutes. The cookies should look puffed and cracked on top, with the edges just set.
- Let the cookies rest on the hot baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
