  • Author: Sarah Wasserman
  • Total Time: 42 minutes
  • Yield: 24 cookies 1x

Description

These crowd-pleasing no-bake avalanche cookies with white chocolate are the kind of recipe you make when you need something impressive without breaking a sweat. They’re perfect for holiday cookie exchanges, last-minute potlucks, or when you just need a sweet fix without turning on the oven.

Ingredients

Scale
  • 12 ounces white chocolate chips (Ghirardelli or Guittard recommended)
  • 1 cup creamy peanut butter (Jif or Skippy recommended)
  • 3 cups crispy rice cereal (Kellogg’s Rice Krispies recommended)
  • 1/2 cup mini marshmallows (optional)
  • 1/4 cup chopped peanuts (optional)
  • 1 teaspoon vanilla extract (optional)
  • Flaky sea salt (optional, for topping)

Instructions

  1. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Pour the white chocolate chips into a large microwave-safe bowl.
  3. Microwave the white chocolate chips in 30-second intervals, stirring between each, until smooth and glossy (about 90 seconds total).
  4. Add the peanut butter to the melted white chocolate and stir until completely combined and smooth.
  5. Fold in the crispy rice cereal gently using a rubber spatula, being careful not to crush the cereal.
  6. Let the mixture cool for 2-3 minutes to thicken slightly.
  7. Scoop the mixture onto the prepared baking sheet using a 1.5-inch cookie scoop or two spoons, placing mounds about 2 inches apart.
  8. Optional: Press a few extra cereal pieces on top for a rustic look.
  9. Refrigerate for at least 30 minutes until firm.
  10. Remove from the fridge and serve cold or at cool room temperature.

Notes

Don’t overheat the white chocolate—use 30-second intervals. Use processed peanut butter (not natural) for best results. Let cookies set completely before stacking. For vegan version, use dairy-free white chocolate chips. Cookies keep in the refrigerator for up to 7 days or freeze for up to 3 months.
