  • Pinch of salt
  • 1 English cucumber, diced (about 2 cups / 250g)
  • 1 cup (150g) cherry tomatoes, halved
  • 1 bell pepper, thinly sliced
  • 1 large carrot, shredded
  • 3 tablespoons (45ml) extra virgin olive oil
  • 2 tablespoons (30ml) fresh lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 garlic clove, minced
  • Cooked protein of choice (diced grilled chicken, canned chickpeas, hard-boiled eggs, or sliced turkey)
  • Leafy greens (optional, e.g., baby spinach, arugula)
  • Creamy element (plain Greek yogurt, hummus, or mashed avocado)
  • Toasted almonds or pumpkin seeds for crunch
  • Fresh herbs (parsley, dill, or basil, optional)

Instructions

  1. Cook your grains: Rinse 1 cup (180g) of quinoa or farro under cold water. Add to a pot with 2 cups (475ml) of water and a pinch of salt. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes (quinoa) or 25 minutes (farro). Fluff with a fork and let cool completely before assembling.
  2. Prepare your protein: If using canned chickpeas, drain, rinse, and pat dry. If using rotisserie chicken, remove skin and shred into bite-sized pieces. For hard-boiled eggs, place eggs in a pot, cover with cold water, bring to a boil, cover, and remove from heat. Let sit for 10 minutes, then transfer to an ice bath. Peel and slice.
  3. Chop your vegetables: Dice 1 English cucumber (about 2 cups / 250g), halve 1 cup (150g) of cherry tomatoes, thinly slice 1 bell pepper, and shred 1 large carrot. Keep each vegetable in separate bowls or containers.
  4. Make the dressing: In a small jar, combine 3 tablespoons (45ml) of olive oil, 2 tablespoons (30ml) of fresh lemon juice, 1 teaspoon of Dijon mustard, ½ teaspoon of salt, ¼ teaspoon of black pepper, and 1 minced garlic clove. Shake well.
  5. Assemble the bowls: In each container, layer starting with the grain (about ½ cup / 90g), then protein (about ¾ cup / 150g), then vegetables. Keep the dressing in a separate small container.
  6. Add the creamy element (if using): Spoon 2 tablespoons (30g) of hummus, Greek yogurt, or mashed avocado into a small silicone cup or the corner of the container.
  7. Top with crunch: Add a small baggie of toasted almonds or pumpkin seeds to each lunch. Sprinkle them on right before eating.
  8. Refrigerate: Store assembled containers in the refrigerator for up to 4 days. Keep dressing and crunchy toppings separate until serving.

Notes

Dry ingredients thoroughly to prevent sogginess. Keep wet and dry components separate until serving. Layer strategically for jar salads: dressing at bottom, hearty vegetables, grains, protein, leafy greens on top. Let lunch sit at room temperature for 5-10 minutes before eating for better flavor.
