  • 1 lb ground beef (80/20)
  • 1/2 lb Mexican-style chorizo
  • 1 packet taco seasoning (or homemade: chili powder, cumin, smoked paprika, garlic powder, onion powder)
  • 2 cups queso or nacho cheese sauce
  • 1 can refried beans
  • 1 cup pickled jalapeños
  • 2 cups guacamole (fresh or store-bought)
  • 1 cup pico de gallo or salsa
  • 1 cup sour cream or Mexican crema
  • 2 cups shredded lettuce (iceberg or romaine)
  • 2 Roma tomatoes, diced
  • 1 cup shredded cheddar and Monterey Jack cheese blend
  • 1/2 cup sliced black olives
  • 1/2 cup fresh cilantro, chopped
  • Lime wedges, for serving

Instructions

  1. Cook the Meat: Heat a large skillet over medium-high heat. Add the ground beef and chorizo, breaking it up with a spatula. Cook until browned and cooked through, about 8-10 minutes. Drain excess fat. Stir in taco seasoning and 1/4 cup water. Simmer for 2-3 minutes until thickened. Transfer to a small bowl.
  2. Warm the Queso & Beans: In a small saucepan over low heat, warm the queso, stirring occasionally. In another saucepan or microwave, warm the refried beans until smooth. Transfer each to separate small serving bowls.
  3. Prep the Fresh Toppings: Make guacamole by mashing avocados with lime juice, salt, diced onion, and cilantro. Dice tomatoes, shred lettuce, slice jalapeños (if needed), and cut limes into wedges. Set everything in small prep bowls.
  4. Assemble the Board: Place a large board or baking sheet on the table. Arrange small bowls of queso, refried beans, guacamole, sour cream, and pico de gallo in a pattern (e.g., down the center to mimic football laces).
  5. Layer the Chips: Pour tortilla chips into the empty spaces around the bowls, arranging them in a single, even layer.
  6. Add the Hot Toppings: Spoon the hot seasoned beef and chorizo directly onto a portion of the chips. Sprinkle shredded cheddar cheese over the hot meat to melt slightly.
  7. Add the Cold Toppings: Scatter shredded lettuce, diced tomatoes, black olives, and pickled jalapeños evenly over the chips and meat.

Notes

The key to keeping chips crisp is using small bowls for wet ingredients like salsa, guacamole, and sour cream.
