Ultimate Fudgy Cosmic Brownies

  • Author: zack
  • Total Time: 45-50 minutes
  • Yield: 16 servings 1x

Description

A quick and easy recipe for rich, dense, fudgy brownies topped with colorful cosmic candy-coated chocolates, perfect for any occasion and loved by kids and adults alike.

Ingredients

Scale
  • 1 cup (225g) unsalted butter, melted
  • 2 cups (400g) granulated sugar
  • 3 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (125g) all-purpose flour (can swap with gluten-free flour blend)
  • 3/4 cup (75g) unsweetened cocoa powder (Dutch-processed recommended)
  • 1/2 teaspoon salt
  • 1/2 cup (90g) dark chocolate chips
  • 3/4 cup (120g) cosmic candy-coated chocolates (like M&M’s or similar)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan and line with parchment paper, leaving some overhang.
  2. Melt the butter in a microwave-safe bowl or on the stovetop until fully liquid but not boiling. Let it cool slightly.
  3. In a large bowl, whisk together the melted butter and granulated sugar until combined. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract until the batter is glossy and thick.
  4. In a separate bowl, sift together the flour, cocoa powder, and salt to prevent lumps.
  5. Gradually fold the dry ingredients into the wet mixture using a rubber spatula, avoiding overmixing. Fold in the dark chocolate chips until just distributed.
  6. Pour the batter evenly into the prepared pan. Sprinkle the cosmic candy-coated chocolates evenly over the top, pressing lightly so they stick but don’t sink.
  7. Bake for 30-35 minutes, starting to check at 28 minutes with a toothpick. It should come out with a few moist crumbs but no wet batter.
  8. Remove from oven and cool completely on a wire rack for at least 20 minutes. Use the parchment overhang to lift brownies out and slice into 16 squares.

Notes

Do not overmix the batter to keep brownies dense and fudgy. Use room temperature eggs for smooth batter. Press candy lightly on top to avoid sinking. Start checking brownies early to avoid overbaking. Chilling batter briefly before adding candy can help keep candy colors bright. For dairy-free, swap butter with coconut oil and use dairy-free chocolate chips. For gluten-free, use a gluten-free flour blend. Variations include adding nuts, spices, or peanut butter swirl.
