Description

  • 2 ½ cups (315g) all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup (226g) unsalted butter, very cold and cut into small cubes
  • ½ cup (120ml) ice water, plus more if needed
  • 1 ½ lbs (680g) boneless, skinless chicken breasts or thighs
  • 4 tablespoons (56g) unsalted butter
  • 1 large yellow onion, diced (about 1 ½ cups)
  • 3 cloves garlic, minced
  • 3 medium carrots, peeled and diced (about 1 cup)
  • 2 stalks celery, diced (about ¾ cup)
  • 1 cup (150g) frozen peas
  • ⅓ cup (42g) all-purpose flour
  • 2 cups (480ml) chicken broth
  • 1 cup (240ml) whole milk or heavy cream
  • ¼ cup (60ml) dry white wine (optional)
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
  • ½ teaspoon dried rosemary, crushed
  • Salt and freshly ground black pepper to taste
  • 1 large egg, beaten with 1 tablespoon water

Instructions

  1. Make the pie crust: In a large bowl, whisk together the flour, salt, and sugar. Add the cold butter cubes. Using a pastry cutter or your fingertips, work the butter into the flour until it looks like coarse meal with some pea-sized butter pieces remaining.
