  • 4 large sourdough bread bowls

Instructions

  1. Prepare the bread bowls: Using a serrated knife, cut a circle about 2 inches from the top of each sourdough loaf. Gently pull out the soft interior bread, leaving a 1/2-inch thick shell. Reserve the tops and the pulled-out bread for dipping or croutons. Set the bowls aside.
  2. Melt the butter: In a large Dutch oven or heavy pot over medium heat, melt the 4 tablespoons of butter. Once it’s bubbling, add the diced onion. Cook for 4-5 minutes, stirring occasionally, until the onion is soft and translucent.
  3. Add the garlic: Toss in the minced garlic and cook for 30 seconds until fragrant.
  4. Make the roux: Sprinkle the 1/4 cup of flour over the onion mixture. Stir constantly with a wooden spoon for 1-2 minutes until the mixture turns a light golden color.
  5. Pour in the beer: Slowly pour the 12 ounces of beer into the pot while whisking continuously. The mixture will seize up at first and look clumpy—keep whisking until smooth. Let it simmer for 2 minutes.
  6. Add the broth and milk: Pour in the 2 cups of chicken broth and 1 cup of whole milk. Whisk until combined and smooth. Bring the soup to a gentle simmer.
  7. Season the base: Stir in the 1 tablespoon of Dijon mustard, 1 teaspoon of Worcestershire sauce, 1/2 teaspoon of paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Let the soup simmer for 5 minutes, stirring occasionally.
  8. Lower the heat: Reduce the heat to low. The soup should be hot but not bubbling.
