  • 8 oz (225g) cremini mushrooms, sliced
  • 1 medium yellow onion, finely diced
  • 3 tablespoons (24g) all-purpose flour
  • 1 cup (240ml) whole milk
  • ½ cup (120ml) heavy cream
  • 1 can (10.5 oz / 298g) condensed cream of mushroom soup
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ¼ teaspoon freshly grated nutmeg
  • Salt and freshly ground black pepper to taste
  • 1.5 cups (about 85g) crispy fried onions
  • ½ cup (60g) fresh breadcrumbs (panko recommended)
  • ¼ cup (25g) grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Position a rack in the middle of the oven. Bring a large pot of salted water to a boil.
  2. Trim the ends off the green beans and cut them into 2-inch pieces. Drop the beans into the boiling water and cook for exactly 3 minutes. Drain immediately and plunge them into a bowl of ice water to stop the cooking. Drain well.
  3. In a large skillet over medium heat, melt the butter. Add the sliced mushrooms and cook for 5-6 minutes, stirring occasionally, until they release their liquid and start to brown. Add the diced onion and cook for another 3 minutes until softened.
  4. Sprinkle the flour over the mushroom mixture and stir constantly for 1 minute. Slowly pour in the milk while whisking continuously to prevent lumps. Then add the heavy cream and keep stirring until the sauce thickens, about 2-3 minutes.
  5. Stir in the condensed cream of mushroom soup, Worcestershire sauce, garlic powder, and nutmeg. Season with salt and pepper to taste.
  6. Add the blanched green beans to the sauce and stir until every piece is coated. Transfer the mixture to a greased 9×13-inch baking dish and spread into an even layer.
  7. In a small bowl, mix together the crispy fried onions, breadcrumbs, and Parmesan cheese. Sprinkle this mixture evenly over the casserole.
  8. Bake for 20-25 minutes, until the filling is bubbly around the edges and the topping is deep golden brown. Let rest for 5 minutes before serving.

Notes

For best results, don’t skip blanching the green beans—it ensures a crisp-tender texture. Season in layers for deeper flavor. To make ahead, assemble the casserole (minus topping) up to 2 days in advance; add topping and bake 30-35 minutes. Double the topping for extra crunch.
