- 1/2 cup sun-dried tomatoes in oil, drained and chopped
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup fresh basil, chopped
Instructions
- Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper. Let them sit at room temperature for about 10 minutes.
- Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, carefully place the chicken thighs skin-side down. Cook undisturbed for 5-6 minutes until golden brown and crispy. Flip and cook for another 3-4 minutes. Transfer to a plate and set aside.
- Reduce heat to medium. In the same skillet, add the chopped sun-dried tomatoes and minced garlic. Stir constantly for about 1 minute until fragrant.
- Pour in the chicken broth and scrape up the browned bits from the bottom of the pan. Let it simmer for 2 minutes until slightly reduced.
- Lower heat to medium-low and stir in the heavy cream, Parmesan cheese, dried oregano, and red pepper flakes (if using). Stir until the cheese is melted and the sauce is smooth. Adjust salt and pepper to taste.
- Return the chicken thighs to the skillet, skin-side up, nestling them into the sauce. Spoon a little sauce over the tops. Cover and simmer on low heat for 15-20 minutes until the chicken reaches an internal temperature of 165°F.
- Remove from heat and sprinkle with fresh chopped basil. Let it rest for 5 minutes before serving. Serve over pasta, rice, or with crusty bread.
