- 4–5 pounds boneless pork shoulder, trimmed of excess fat
- 1 large onion, sliced
- 2 tablespoons apple cider vinegar
- 2 tablespoons brown sugar
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup BBQ sauce (store-bought or homemade)
- Soft sandwich buns or brioche rolls, toasted
- Optional toppings: coleslaw, pickles, extra BBQ sauce
Instructions
- Season the pork shoulder generously with salt, pepper, smoked paprika, and garlic powder. Rub the seasonings into the meat.
- Place the sliced onion at the bottom of the slow cooker. Add the seasoned pork shoulder on top.
- Pour in the BBQ sauce, apple cider vinegar, and brown sugar.
- Set the slow cooker to low heat and cook for 8-10 hours, or on high heat for 4-6 hours, until the pork is fork-tender.
- Use two forks or tongs to shred the pork directly in the slow cooker. Stir it into the sauce to coat every piece.
- Lightly toast your sandwich buns or rolls for extra flavor and texture.
- Assemble the sandwiches by piling the shredded pork onto the buns, adding coleslaw or your favorite toppings, and serve immediately.
Notes
For extra flavor, sear the pork shoulder in a hot skillet before adding it to the slow cooker. Leftover pork can be used in tacos, quesadillas, or on baked potatoes. If the sauce is too thin after shredding the pork, let it simmer on high for 15-20 minutes to thicken.
