A simple, soothing remedy made from roasted garlic and honey that helps calm sore throats and boost immunity. Perfect for cold season, this easy recipe transforms harsh raw garlic into a sweet, mellow syrup that’s surprisingly delicious.
Ingredients
- 2 whole heads of garlic
- 1 cup raw honey (unfiltered if possible)
- Optional: a pinch of flaky sea salt
- Optional: a sprig of fresh thyme or rosemary
Instructions
- Preheat your oven to 400°F (200°C).
- Slice off the top quarter-inch of each garlic head to expose the cloves. Do not peel.
- Place each garlic head on a piece of aluminum foil, drizzle a tiny bit of olive oil over the cut tops, and wrap tightly. Place on a baking sheet.
- Roast for 45-60 minutes until cloves are soft, golden, and easily pierced with a knife.
- Let the garlic cool for about 10 minutes until cool enough to handle.
- Squeeze the roasted cloves out of the skins into a small bowl. Mash with a fork into a rough paste.
- In a small saucepan, warm the honey over low heat (do not boil). Add the mashed garlic and stir until fully combined. Add optional salt or herbs if using.
- Pour the mixture into a clean, dry glass jar. Let cool completely before sealing. Store in the refrigerator.
Notes
Roasting transforms garlic from harsh to sweet and mellow. Use raw honey for maximum benefits. The remedy lasts up to 3 months in the refrigerator. Honey may crystallize over time; warm the jar in a bowl of hot water to restore liquid consistency. Do not microwave. A teaspoon every 3-4 hours is recommended when feeling under the weather. Not suitable for children under 1 year old.
