Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, 2 teaspoons cream of tartar, 1½ teaspoons pumpkin pie spice, 1 teaspoon cinnamon, and ½ teaspoon salt until evenly distributed—about 15 seconds. Set aside.
- In a large mixing bowl, beat together 1 cup granulated sugar, ¼ cup vegetable oil, and ¼ cup shortening until light and fluffy—about 2 minutes with a hand mixer on medium speed. The mixture should look pale and slightly grainy but smooth.
- Mix in ½ cup pumpkin puree, 1 large egg, and 1 teaspoon vanilla extract. Beat on medium speed until fully combined—about 1 minute. Scrape down the sides of the bowl with a spatula.

- Using a 1½ tablespoon cookie scoop, portion out balls of dough. Drop each ball into the cinnamon sugar mixture and roll around until fully coated. Place on the prepared baking sheets about 2 inches apart.

For a dairy-free option, this recipe is already dairy-free; just check that pumpkin puree has no milk solids. To freeze, arrange cooled cookies in a single layer on a baking sheet, freeze until solid (about 2 hours), then transfer to a freezer-safe bag for up to 3 months. Thaw at room temperature for 30 minutes and warm in a 300°F oven for 5 minutes.
