  • 1 tablespoon olive oil (for dressing)
  • 1 clove garlic, minced
  • 6 large eggs

Instructions

  1. Start your grains first: Rinse 2 cups of rice or quinoa under cold water until water runs clear. Add to pot with 3 cups water (for rice) or 2 cups water (for quinoa). Add a pinch of salt and a drizzle of oil. Bring to a boil, reduce to low, cover, and cook for 18-20 minutes. Let sit covered for 5 minutes, then fluff with a fork.
  2. While grains cook, prep your protein: Season 2 pounds of chicken thighs or breasts with salt, pepper, garlic powder, and paprika. Place on a parchment-lined sheet pan. Roast at 400°F for 20-25 minutes until internal temperature reaches 165°F. If using ground meat, cook in a skillet over medium-high heat for 8-10 minutes until browned.
  3. Roast your vegetables: Chop 2 bell peppers, 1 head of broccoli, and 2 sweet potatoes into equal-sized pieces. Toss with olive oil, salt, pepper, and dried herbs. Spread on a second sheet pan in a single layer. Roast at 400°F for 20 minutes, flipping halfway through.
  4. Make your sauce or dressing: Whisk together 1/2 cup Greek yogurt, 2 tablespoons lemon juice, 1 tablespoon olive oil, 1 minced garlic clove, and a pinch of salt and pepper. Store in a small jar.
  5. Hard-boil some eggs: Place 6 eggs in a pot, cover with cold water by an inch. Bring to a boil, cover, remove from heat, and let sit for 12 minutes. Transfer to an ice bath. Peel when cool.
  6. Portion everything out: Let all cooked ingredients cool completely (about 20 minutes). Divide grains, protein, and vegetables evenly among containers. Keep dressing separate until ready to eat.

Notes

Don’t pack containers while food is warm to avoid condensation and sogginess. Season in layers: season grains while cooking, vegetables before roasting, and dressing. Keep wet and dry components separate until serving. Freeze portions you won’t eat within 4-5 days. Reheat grains with a sprinkle of water, proteins covered, and vegetables in a skillet or air fryer for best texture.
