- 8 ounces smoked Gouda cheese, shredded
- 1 whole head roasted garlic
- 1 cup beer (lager or pale ale recommended)
- 4 ounces cream cheese, softened
- 1/2 cup sour cream
- 1 tablespoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon smoked paprika
- Salt and freshly ground black pepper, to taste
- Fresh chives, chopped (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C). Slice the top off a whole garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until cloves are soft and caramelized. Let cool, then squeeze out cloves and mash gently with a fork.
- In a medium saucepan over low heat, combine softened cream cheese and sour cream. Stir gently until smooth and creamy, about 3-5 minutes. Avoid high heat to prevent curdling.
- Slowly pour in the beer, stirring constantly to blend with the cream cheese mixture. Use cold or room temperature beer to avoid breaking the sauce.
- Gradually add shredded smoked Gouda, stirring continuously until fully melted and silky smooth, about 5-7 minutes. Add a splash more beer or milk if dip is too thick.
- Stir in roasted garlic, Dijon mustard, Worcestershire sauce, smoked paprika, salt, and pepper. Taste and adjust seasoning as needed.
- Keep dip warm on low heat or transfer to a warm serving dish. Garnish with chopped fresh chives if desired and serve warm.
Notes
Use freshly shredded smoked Gouda for best melting and texture. Roast garlic whole to mellow sharpness and add sweetness. Avoid high heat when melting cheese to prevent graininess. Adjust dip thickness with beer or milk as needed. Store leftovers in airtight container refrigerated up to 3 days; reheat gently with splash of beer or milk.
