  • 1 lb (450 g) ground beef (80/20 blend)
  • 12 slices thin-cut bacon
  • 1/2 cup (50 g) breadcrumbs (plain or seasoned)
  • 1 large egg, room temperature
  • 1/4 cup finely chopped onion (yellow onion preferred)
  • 2 garlic cloves, minced
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup (120 ml) BBQ sauce (smoky, slightly sweet style recommended)
  • Salt and black pepper, to taste
  • Optional: 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lay out the 12 bacon strips on a cutting board for wrapping later.
  3. In a large bowl, combine ground beef, breadcrumbs, egg, chopped onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix gently until just combined.
  4. Divide the meat mixture evenly into 12 portions. Roll each into a ball and place in the muffin tin cups.
  5. Wrap one bacon strip around each meatball, tucking the end underneath to keep it snug.
  6. Bake uncovered for 25 minutes to cook the meat and start crisping the bacon.
  7. Remove muffins from oven and brush a generous layer of BBQ sauce over each bacon wrap.
  8. Return to oven and bake an additional 10-15 minutes until bacon is crispy and internal temperature reaches 160°F (71°C).
  9. Let muffins rest in the pan for 5 minutes before removing. Garnish with chopped parsley if desired and serve warm.

Do not overmix the meat to avoid a dense texture. Use a meat thermometer to ensure internal temperature reaches 160°F (71°C). Wrap bacon tightly to prevent shrinking and curling. Brush BBQ sauce near the end of baking to avoid burning. Tent with foil if bacon crisps too quickly.
