  • 4 cloves garlic, minced

  • 2 tablespoons (30ml) extra virgin olive oil
  • 1 tablespoon (15ml) apple cider vinegar
  • 1 teaspoon (1g) dried thyme
  • Salt and freshly ground black pepper, to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat your oven to 400°F (200°C) and allow it to reach temperature for even baking.
  2. In a mixing bowl, whisk together honey, minced garlic, soy sauce, olive oil, apple cider vinegar, dried thyme, salt, pepper, and optional red pepper flakes until glossy and fragrant.
  3. Pat the pork chops dry with paper towels and season both sides lightly with salt and pepper.
  4. Coat the pork chops with the marinade, rubbing it all over each chop. Let them sit at room temperature for 10-15 minutes.
  5. Arrange the pork chops in an oven-safe baking dish or rimmed baking sheet, spacing them out. Pour any remaining marinade over the chops.
  6. Bake uncovered for 20-25 minutes, basting the chops halfway through with pan juices. For deeper caramelization, broil for the last 2-3 minutes, watching carefully to avoid burning.
  7. Remove from oven and tent loosely with foil. Let rest for 5 minutes to redistribute juices.
  8. Serve warm, spooning extra pan glaze over the pork chops.
