Ingredients
- 1 lb ground chuck beef (80/20 blend preferred)
- Salt and black pepper, to season
- Vegetable oil or neutral oil, for griddle or skillet
- ½ cup mayonnaise
- 2 tbsp finely chopped dill pickles
- 1 tbsp Dijon mustard
- ½ tsp garlic powder
- ½ tsp smoked paprika
- 1 tsp fresh lime juice
- Optional: dash of hot sauce
- 8 small corn tortillas (about 6 inches diameter)
- 1 cup shredded iceberg lettuce or thinly sliced cabbage
- ½ cup diced tomatoes or pico de gallo
- ½ cup shredded cheddar or Monterey Jack cheese
- Optional: thinly sliced red onions or pickled onions
- Fresh cilantro leaves for garnish
Instructions
- Make the Special Sauce: In a small bowl, combine mayonnaise, chopped dill pickles, Dijon mustard, garlic powder, smoked paprika, and lime juice. Whisk until smooth. Add hot sauce if desired. Cover and chill for about 5 minutes.
- Form the Beef Balls: Divide ground chuck into 8 equal portions (~2 oz each). Roll loosely into balls and season with salt and pepper on all sides.
- Heat Skillet or Griddle: Preheat cast iron skillet over medium-high heat and add 1 tsp vegetable oil. Heat until a drop of water sizzles immediately (2-3 minutes).
- Smash the Patties: Place 2-3 beef balls on skillet without crowding. Press down firmly with spatula to flatten to about ¼ inch thick. Hold pressure for 10 seconds to form crispy edges. Cook 2-3 minutes until edges are brown and crusty.
- Flip and Finish Cooking: Carefully flip patties and cook for another minute to medium doneness. Sprinkle cheese on top immediately after flipping to melt.
- Warm the Tortillas: While patties finish cooking, warm corn tortillas on a dry skillet for 15-20 seconds per side until pliable.
- Assemble the Tacos: Spread special sauce on each tortilla. Add a smashed burger patty, then top with lettuce or cabbage, diced tomatoes, red onions if using, shredded cheese, and garnish with cilantro.
- Serve immediately while patties are hot and crispy.
Notes
Do not overcrowd the pan to ensure crispy edges; cook patties in batches if needed. Use a spatula with a thin edge for easier smashing and flipping. Warm tortillas on a dry skillet to prevent tearing. Sauce can be made ahead and refrigerated. For spicier sauce, add cayenne or chipotle powder. Swap mayo with Greek yogurt for a lighter sauce. Ground turkey or plant-based beef can be used as alternatives.
