- 12 oz beer (lager, pilsner, or amber ale)
- 3 large yellow onions, thinly sliced
- 2 tablespoons unsalted butter
- 1 tablespoon packed brown sugar
- 4 cloves garlic, minced
- 1/2 cup low-sodium beef broth
- 2 tablespoons Dijon mustard
- Salt and black pepper to taste
- 1 bay leaf
- 2 sprigs fresh thyme (or 1/2 teaspoon dried)
- 4 to 6 hoagie rolls or brat buns
Instructions
- Sear the brats: Heat 1 tablespoon butter in a Dutch oven over medium-high heat. Add bratwurst and sear 3-4 minutes per side until deeply browned. Transfer to a plate; do not clean the pot.
- Caramelize the onions: Reduce heat to medium. Add remaining 1 tablespoon butter, sliced onions, and brown sugar. Cook 20-25 minutes, stirring occasionally, until deep golden brown. Add a splash of beer or broth if sticking.
- Add aromatics: Stir in minced garlic, thyme, and bay leaf. Cook 1-2 minutes until fragrant.
- Deglaze and braise: Pour in beer and beef broth. Scrape up browned bits. Bring to a gentle simmer. Return brats to pot, cover, and simmer on low 25-30 minutes.
- Thicken the sauce: Remove brats. Increase heat to medium-high and simmer uncovered 5-7 minutes until reduced by half and syrupy. Stir in Dijon mustard. Season with salt and pepper. Remove bay leaf and thyme sprigs.
- Final sear: Preheat broiler or grill to high. Place brats on a baking sheet or grill grates. Broil or grill 1-2 minutes per side until casings are crisp.
- Assemble and serve: Lightly toast buns. Place a brat in each bun, top with caramelized onions and a drizzle of reduced beer sauce. Serve immediately.
Notes
Do not pierce the brats during cooking to keep them juicy. Caramelize onions low and slow to avoid burning. Avoid hoppy beers like IPAs as they turn bitter. The final sear is essential for crispy casings. Toast buns to prevent sogginess. Leftovers taste even better the next day.
