Savory BBQ Pulled Pork Sliders with Creamy Coleslaw

Description

Tender slow-cooked pulled pork combined with a creamy, tangy coleslaw served on soft slider buns. A quick and easy comfort food perfect for gatherings and family dinners.


Ingredients

  • 34 lbs pork shoulder
  • 1 cup BBQ sauce (240 ml)
  • 2 tbsp yellow mustard (30 ml)
  • 2 tbsp apple cider vinegar (30 ml)
  • 2 tbsp brown sugar (25 g)
  • 1 tsp garlic powder (5 g)
  • 1 tsp onion powder (5 g)
  • Salt and black pepper to taste
  • 12 small slider buns
  • 3 cups shredded green cabbage (200 g)
  • 1 cup shredded carrots (120 g)
  • ½ cup mayonnaise (120 ml)
  • 1 tbsp apple cider vinegar (15 ml)
  • 1 tbsp honey (20 g)
  • 1 tsp Dijon mustard (5 ml)
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the pork shoulder but leave some for moisture. Pat dry and season generously with salt, pepper, garlic powder, and onion powder.
  2. In a bowl, combine BBQ sauce, yellow mustard, apple cider vinegar, and brown sugar. Stir until sugar dissolves.
  3. Place the seasoned pork shoulder in the slow cooker and pour the BBQ sauce blend over it. Cover and cook on low for 8-10 hours or on high for 4-5 hours until fork-tender.
  4. Remove pork from slow cooker and shred using forks or meat claws. Return shredded pork to slow cooker and mix with remaining sauce. Keep warm.
  5. In a large bowl, whisk together mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper. Add shredded cabbage and carrots, toss gently to combine. Chill for at least 30 minutes.
  6. Slice slider buns in half. Pile pulled pork on bottom half, top with creamy coleslaw, and close with bun tops.
  7. Serve immediately or keep warm in slow cooker on ‘keep warm’ setting for up to one hour.

Notes

If pork looks dry when shredding, add some cooking liquid back in for moisture. Adjust coleslaw sweetness with extra honey if too tangy. Warm buns slightly before assembling to add softness. For gluten-free, use gluten-free buns or lettuce wraps. Instant Pot can be used to reduce cooking time to about 60-70 minutes on high pressure with natural release.
