A quick and easy homemade summer drink combining fresh strawberries and lemon juice into a perfectly balanced, icy slush that’s refreshing and crowd-pleasing.

- 2 cups fresh strawberries, hulled and halved (or frozen strawberries)
- ½ cup fresh lemon juice (about 3–4 medium lemons)
- ⅓ cup granulated sugar (65 grams), adjust to taste
- ½ cup cold water (120 ml)
- 2 cups ice cubes (about 300 grams)
- Optional: ¼ cup sparkling water (60 ml) for a fizzy twist
Instructions
- Rinse 2 cups of fresh strawberries, hull and halve them. If using frozen strawberries, measure them out without prep.
- Roll lemons on the counter, cut in half, and juice to get about ½ cup fresh lemon juice. Remove seeds.
- In a small bowl, dissolve ⅓ cup sugar in ½ cup cold water to make simple syrup.
- In a blender, combine strawberries, lemon juice, and sugar-water mixture. Blend on medium speed for about 30 seconds until smooth and vibrant pink.
- Add 2 cups ice cubes to the blender. Pulse in short bursts for 1-2 minutes until the mixture is thick and slushy.
- Taste the slush and adjust sweetness by adding more sugar or honey if needed. Add a splash of cold water or lemon juice if too thick.
- Optionally, stir in ¼ cup sparkling water gently without blending to keep the fizz.
- Serve immediately in chilled glasses or mason jars, garnished with a lemon wheel or fresh strawberry.
Notes
Pulse ice gradually to avoid over-blending into liquid. Use simple syrup to prevent gritty sugar texture. Adjust sweetness last. Chill glasses before serving for extra refreshment. Frozen strawberries can replace fresh for thicker texture without extra ice.
