  • 1 head iceberg or butter lettuce leaves

  • 2 cloves garlic, minced
  • 2 green onions, thinly sliced
  • 1 tsp sesame oil
  • 1 tsp rice vinegar

Instructions

  1. Prep your ingredients: peel and grate 1 tablespoon of fresh ginger, mince 2 cloves of garlic, thinly slice 2 green onions, and separate, rinse, and pat dry the lettuce leaves.
  2. Heat a large skillet over medium-high heat. Add the ground beef, breaking it up with a wooden spoon. Cook until browned and no pink remains, about 6-8 minutes. Drain excess fat if necessary.
  3. Stir in the minced garlic and grated ginger. Cook for 1-2 minutes until fragrant but not burnt.
  4. In a small bowl, whisk together 3 tablespoons soy sauce, 1 tablespoon honey or brown sugar, 1 teaspoon sesame oil, and 1 teaspoon rice vinegar. Pour over the beef mixture and stir to coat evenly. Let simmer for 2-3 minutes until the glaze thickens slightly.
  5. Remove from heat and stir in the sliced green onions.
  6. Spoon the savory ground beef onto individual lettuce leaves. Add optional toppings like toasted sesame seeds, shredded carrots, or chopped cilantro if desired. Roll or fold the leaves to create wraps.
  7. Serve immediately while warm.

Notes

Do not overcook the beef to keep it juicy. Add garlic and ginger after beef is mostly cooked to avoid bitterness. Use bigger, sturdier lettuce leaves from the center of the head to prevent tearing. If glaze is too thin, simmer longer; if too thick, add a splash of water or broth. Store beef filling separately from lettuce to avoid sogginess.
