Ingredients

  • 2 medium apples (Honeycrisp or Granny Smith), peeled and sliced ¼-inch thick
  • 3 tablespoons unsalted butter, cut into small cubes
  • ¼ cup all-purpose flour, spooned and leveled
  • ¼ cup rolled oats (old-fashioned)
  • ¼ cup packed brown sugar (light or dark)
  • 2 tablespoons granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt (flaky sea salt preferred)
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • Optional: vanilla ice cream or whipped cream for serving

Instructions

  1. Preheat oven to 375°F (190°C). Place ramekins or baking dish on a small baking sheet.
  2. Peel, core, and slice apples into ¼-inch thick wedges. Toss with lemon juice, granulated sugar, ¼ teaspoon cinnamon, and a pinch of salt. Let sit while making topping.
  3. In a small bowl, combine flour, oats, brown sugar, and remaining ¼ teaspoon cinnamon. Add cubed butter and work into dry ingredients until mixture resembles coarse crumbs with some pea-sized butter pieces. Refrigerate topping.
  4. In a small saucepan over medium heat, combine water, 1 tablespoon butter, and 1 tablespoon brown sugar. Stir until melted and bubbling, about 2 minutes. Remove from heat and stir in a pinch of flaky salt.
  5. Divide apple mixture evenly between two ramekins. Drizzle caramel sauce over each. Sprinkle chilled topping over apples, pressing down gently.
  6. Bake for 22-25 minutes, until topping is golden brown and filling is bubbling. If topping browns too quickly, tent with foil for last 5 minutes.
  7. Let cool on a wire rack for at least 5 minutes. Serve warm with vanilla ice cream or whipped cream.

Notes

Don’t skip the resting time after baking—let the crisp cool for at least 5 minutes so the caramel sets. Keep the topping cold for best crispness. Use a baking sheet under ramekins to catch drips.
