A quick and easy apple crisp for two with a salted caramel twist. Made with simple ingredients and ready in about 35 minutes, it’s the perfect weeknight dessert.

- 2 medium apples (Honeycrisp or Granny Smith), peeled and sliced ¼-inch thick
- 3 tablespoons unsalted butter, cut into small cubes
- ¼ cup all-purpose flour, spooned and leveled
- ¼ cup rolled oats (old-fashioned)
- ¼ cup packed brown sugar (light or dark)
- 2 tablespoons granulated sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt (flaky sea salt preferred)
- 1 tablespoon lemon juice
- 1 tablespoon water
- Optional: vanilla ice cream or whipped cream for serving
Instructions
- Preheat oven to 375°F (190°C). Place ramekins or baking dish on a small baking sheet.
- Peel, core, and slice apples into ¼-inch thick wedges. Toss with lemon juice, granulated sugar, ¼ teaspoon cinnamon, and a pinch of salt. Let sit while making topping.
- In a small bowl, combine flour, oats, brown sugar, and remaining ¼ teaspoon cinnamon. Add cubed butter and work into dry ingredients until mixture resembles coarse crumbs with some pea-sized butter pieces. Refrigerate topping.
- In a small saucepan over medium heat, combine water, 1 tablespoon butter, and 1 tablespoon brown sugar. Stir until melted and bubbling, about 2 minutes. Remove from heat and stir in a pinch of flaky salt.
- Divide apple mixture evenly between two ramekins. Drizzle caramel sauce over each. Sprinkle chilled topping over apples, pressing down gently.
- Bake for 22-25 minutes, until topping is golden brown and filling is bubbling. If topping browns too quickly, tent with foil for last 5 minutes.
- Let cool on a wire rack for at least 5 minutes. Serve warm with vanilla ice cream or whipped cream.
Notes
Don’t skip the resting time after baking—let the crisp cool for at least 5 minutes so the caramel sets. Keep the topping cold for best crispness. Use a baking sheet under ramekins to catch drips.
