  • Salt and black pepper, to taste
  • 1 tablespoon olive oil or avocado oil
  • 1/3 cup honey
  • 4 cloves garlic, minced
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil (optional)
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 cups broccoli florets, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • Pinch of salt
  • Cooked rice, for serving (optional)
  • Sesame seeds, for garnish (optional)
  • Sliced green onions, for garnish (optional)
  • Lime wedges, for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a sheet pan with parchment paper or place a cast-iron skillet in the oven to preheat.
  2. Make the glaze: In a small bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, sesame oil (if using), and red pepper flakes (if using). Set aside about 2 tablespoons of the glaze for the broccoli.
  3. Prep the salmon: Pat salmon fillets dry with paper towels. Season both sides generously with salt and black pepper. Place skin-side down on the prepared pan or in the hot skillet.
  4. Prep the broccoli: In a medium bowl, toss broccoli florets with olive oil and a pinch of salt. Spread around the salmon on the pan.
  5. Brush the salmon: Using a pastry brush or spoon, coat the top of each salmon fillet with the reserved (non-broccoli) glaze.
  6. Roast for 10 minutes. Remove the pan, brush salmon with another layer of glaze, and toss broccoli with the reserved 2 tablespoons of glaze.
  7. Return to the oven for another 3-5 minutes, until salmon flakes easily and broccoli is tender-crisp with charred edges.
  8. Optional: Broil for 1-2 minutes for extra caramelization, watching carefully to prevent burning.
  9. Let salmon rest for 2 minutes before serving. Serve over rice with sesame seeds, green onions, and lime wedges.

Notes

Pat salmon bone-dry for best caramelization. Let salmon sit at room temperature for 10-15 minutes before cooking. Watch honey carefully as it burns quickly. Double the glaze for extra drizzling. Use good quality, thick honey for best results.
