- 1.5 pounds (680g) boneless, skinless chicken thighs
- 1/3 cup (113g) honey
- 1/4 cup (60ml) low-sodium soy sauce
- 4 to 5 cloves garlic, minced
- 2 tablespoons (30ml) rice vinegar
- 1 tablespoon (15ml) sesame oil
- 1 tablespoon (8g) cornstarch
- 2 tablespoons (30ml) water (for slurry)
- 2 tablespoons (30ml) vegetable oil
- Salt and pepper to taste
- Optional garnish: sliced green onions, sesame seeds, red pepper flakes
Instructions
- Pat the chicken thighs dry with paper towels and season both sides generously with salt and pepper.
- In a small bowl, whisk together honey, low-sodium soy sauce, minced garlic, rice vinegar, and sesame oil. In another small bowl, mix cornstarch with 2 tablespoons of water to create a slurry.
- Heat a large skillet over medium-high heat and add vegetable oil. Let it heat until shimmering.
- Place chicken thighs in the skillet in a single layer. Cook undisturbed for 4 to 5 minutes until golden brown. Flip and cook another 4 to 5 minutes until cooked through (internal temperature 165°F/74°C). Remove chicken and set aside.
- Reduce heat to medium-low. Pour the honey garlic sauce into the skillet, scraping up browned bits. Let bubble for about 1 minute.
- Stir the cornstarch slurry and pour into the sauce. Stir constantly for 30 to 60 seconds until thickened and glossy.
- Return chicken to the skillet, turning to coat in the glaze. Simmer for 1 to 2 minutes.
- Transfer to a platter, spoon remaining glaze over top, and garnish with green onions, sesame seeds, and red pepper flakes if desired. Serve immediately.
Notes
Pat chicken thighs dry for best sear. Don’t crowd the pan. Watch the garlic to avoid burning. Taste sauce before adding slurry and adjust seasoning. Keep heat at medium-low when adding sauce to prevent burning.
