Description
This quick garlic butter shrimp scampi is a fast, buttery, and deeply satisfying dish that comes together in just 15 minutes. Perfect for busy weeknights, it features succulent shrimp in a garlicky white wine sauce served over pasta.

- 1 pound shrimp, peeled and deveined (large or jumbo, 21–25 per pound)
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 6 cloves garlic, minced
- 1/2 cup dry white wine (such as Pinot Grigio or Sauvignon Blanc)
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon red pepper flakes
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
- 8 ounces pasta (linguine or spaghetti)
Instructions
- Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente. Reserve about 1 cup of pasta water before draining. Drain and set aside.
- Pat shrimp dry with paper towels and season lightly with salt and pepper.
- Heat a large skillet over medium-high heat. Add olive oil and 2 tablespoons of butter. Swirl until butter melts and starts to foam.
- Add shrimp in a single layer. Cook undisturbed for 1-2 minutes until bottoms are golden. Flip and cook another 1-2 minutes until pink and just cooked through. Remove to a plate and set aside.
- Reduce heat to medium. Add remaining 2 tablespoons of butter. Once melted, add minced garlic and red pepper flakes. Stir constantly for about 30 seconds until fragrant.
- Pour in white wine and scrape up any browned bits from the bottom of the pan. Let simmer for 1-2 minutes until reduced by half.
- Add lemon juice and a splash of reserved pasta water. Stir to combine. Taste and adjust salt and pepper.
- Return shrimp to the pan. Add drained pasta and toss together with tongs. Add more pasta water a tablespoon at a time if sauce is too thick.
- Remove from heat. Sprinkle with fresh parsley and toss once more. Serve immediately.
Notes
Pat shrimp dry thoroughly to ensure browning. Reserve pasta water to help sauce cling to pasta. Do not overcook shrimp; they are done when pink and curled into a loose C shape. Use good-quality butter for best flavor. If no wine, substitute chicken broth with extra lemon juice.
