  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with cream cheese icing (e.g., Pillsbury Grands)
  • 4 large eggs, room temperature
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 12 tablespoons milk, as needed

Instructions

  1. Preheat oven to 350°F (175°C). Spray a 9×13 inch baking dish with non-stick cooking spray.
  2. Open both cans of cinnamon rolls. Set aside the icing packets for the glaze.
  3. Cut each cinnamon roll into quarters. Scatter the pieces evenly in the prepared baking dish.
  4. In a large mixing bowl, whisk together eggs, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and nutmeg (if using) until smooth and well combined.
  5. Pour the custard over the cinnamon roll pieces. Gently press down with a spatula to help them soak. Let sit for 5 minutes.
  6. Bake for 25-30 minutes, until golden brown on top and set in the center. A knife inserted into the center should come out clean.
  7. While the casserole bakes, make the glaze: In a medium bowl, beat softened cream cheese and butter until smooth. Add powdered sugar, vanilla extract, and reserved icing packets. Beat until combined. Add milk, one tablespoon at a time, until smooth and drizzle-able.
  8. Let the casserole cool for 5-10 minutes. Drizzle the glaze generously over the top.

Notes

Let the casserole rest after baking before adding glaze to prevent it from melting. Use room temperature ingredients for best texture. For make-ahead, assemble the night before, refrigerate, and bake in the morning, adding 5-10 minutes to baking time.
