  • 3 tablespoons (42g) unsalted butter, melted
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • Optional toppings: extra blueberries, sliced almonds, or a drizzle of maple syrup

Instructions

  1. Grease an 8×8 baking dish with butter or cooking spray.
  2. In a small bowl, combine 2 cups rolled oats, 1 teaspoon baking powder, 1 teaspoon cinnamon, and ¼ teaspoon salt. Whisk together.
  3. In a medium bowl, whisk together 1 ½ cups milk, 2 eggs, ⅓ cup maple syrup, 3 tablespoons melted butter, and 1 teaspoon vanilla extract until smooth and slightly frothy.
  4. Pour the dry ingredients into the wet ingredients. Stir with a spatula until just combined (a few lumps are fine).
  5. Gently fold in 1 ½ cups blueberries (frozen or fresh).
  6. Pour the mixture into the greased baking dish and spread evenly. Sprinkle extra blueberries on top if desired.
  7. Cover the dish tightly with plastic wrap or a lid and refrigerate for at least 6 hours or up to 12 hours (overnight is best).
