Quick & Easy Jiffy Corn Casserole with Sour Cream

  • Author: Sarah Wasserman
  • Total Time: 40-45 minutes
  • Yield: 12 servings 1x

Description

This quick Jiffy corn casserole with sour cream is a simple, one-bowl recipe that delivers a creamy, sweet corn flavor with a golden buttery top. Perfect for busy weeknights, potlucks, or holiday dinners, it comes together in under 45 minutes with just 5 minutes of active prep.

Ingredients

Scale
  • 2 boxes (8.5 ounces each) Jiffy Corn Muffin Mix
  • 1 cup (8 ounces) sour cream (full-fat recommended)
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 can (15.25 ounces) whole kernel corn, drained
  • 1 can (15.25 ounces) cream-style corn
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/4 cup chopped green onions (optional)
  • 1/4 teaspoon black pepper (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Give it a full 15 minutes to reach temperature.
  2. Grease your 9×13-inch baking dish with non-stick cooking spray or a thin layer of butter.
  3. In a large mixing bowl, combine the two boxes of Jiffy Corn Muffin Mix. Break up any clumps with your whisk or spoon.
  4. Add the sour cream, dolloping it around the bowl for easier mixing.
  5. Pour in the melted butter, making sure it has cooled slightly so it doesn’t cook the eggs.
  6. Crack the eggs into a small bowl first to avoid shell fragments, then add them to the mixing bowl.
  7. Add the drained whole kernel corn and the cream-style corn.
  8. Stir everything together until just combined, about 15-20 strokes with a wooden spoon. A few small lumps are fine.
  9. Pour the batter into your prepared baking dish and spread it evenly with a spatula.
  10. Bake for 35-40 minutes, until the edges are golden brown and the center is set but still slightly jiggly. A toothpick inserted in the center should come out with a few moist crumbs.
  11. Let it rest for 5-10 minutes before serving.

Notes

Room temperature ingredients matter for a smoother batter. Don’t overmix; stir just until combined. Check for doneness at 35 minutes. Let the casserole rest for 5-10 minutes before serving to allow it to set. For a crowd, double the recipe and bake in a 10×15-inch pan or two 9×13 dishes, adding 10-15 minutes to the baking time.
