  • 1/2 cup raspberry preserves
  • 2 tbsp balsamic vinegar
  • 1 tsp fresh lemon juice
  • Red food coloring (optional)
  • Assorted cured meats – salami slices, pepperoni, or chorizo (about 8 oz / 225 g total)
  • Black crackers or toasted rye crisps
  • Pumpkin seeds
  • Fresh grapes or blackberries
  • Olives – Kalamata or black olives
  • Fresh rosemary sprigs
  • Optional: small Halloween-themed candies or decorations

Instructions

  1. Prepare the Bloody Brie Glaze: In a medium saucepan, combine raspberry preserves, balsamic vinegar, and fresh lemon juice. Heat over medium-low heat, stirring occasionally until smooth and slightly thickened, about 5–7 minutes. Add red food coloring if desired. Set aside to cool slightly.
  2. Place the room-temperature brie wheel in the center of your serving board or platter.
  3. Drizzle the raspberry glaze generously over the top of the brie using a spoon or pastry brush. Let it drip down the sides to create a ‘bloody’ effect.
  4. If available, carefully caramelize the glaze surface with a kitchen torch for 20–30 seconds or broil in the oven for 1–2 minutes, watching closely.
  5. Arrange slices of salami, pepperoni, or chorizo around the brie, rolling some slices into ‘ghost curls.’
  6. Scatter black crackers and toasted rye crisps around the board to create a jagged, spooky perimeter.
  7. Sprinkle pumpkin seeds, tuck in fresh grapes or blackberries, place olives strategically, and garnish with rosemary sprigs.
  8. Optionally, add small Halloween-themed candies or edible decorations around the edges.
  9. Serve the board at room temperature with small knives or spreaders for guests.

Notes

Let the brie sit at room temperature for at least 30 minutes before glazing. The glaze should be thick but pourable; rewarm gently if too thick or simmer longer if too thin. Toast crackers lightly for a charred look but avoid burning. Serve at room temperature for best texture and flavor. Leftovers keep 2–3 days refrigerated; reheat brie slightly before serving.
