Ingredients
Scale
- 8 oz aged Gouda
- 4 oz soft goat cheese log
- 6 oz sharp white Cheddar
- 4 oz blue cheese wedge
- 4 oz prosciutto
- 6 oz Genoa salami
- 4 oz soppressata
- 1/4 cup balsamic glaze
- 1/2 cup Kalamata olives
- 1/2 cup marinated artichoke hearts
- 2 oz honeycomb
- 1/2 cup roasted red peppers
- 1/3 cup cornichons
- 1/2 cup mixed nuts (smoked almonds and candied pecans)
- 4–5 fresh rosemary sprigs
- 1/2 cup blackberries
- 4–5 oz crackers (water crackers, rosemary flatbreads, seeded crisps)
- 1 small baguette, sliced and toasted
Instructions
- Prep Your Ingredients (10 minutes): Take all cheeses out of the refrigerator 20 minutes before starting. Slice salami and soppressata into thin rounds. Cut aged Gouda and white Cheddar into triangular wedges or cubes. Slice goat cheese log into 1/2-inch rounds. Drain and pat dry artichoke hearts and roasted red peppers.
- Position Your Ramekins (2 minutes): Place small bowls on the board for olives, nuts, and honeycomb to create anchors and height variation.
- Arrange the Cheeses (5 minutes): Place largest cheese pieces first: aged Gouda at 12 o’clock, goat cheese rounds at center-left, white Cheddar at 4 o’clock, blue cheese at 8 o’clock. Space them out for the web to be visible.
- Add the Meats (5 minutes): Fold prosciutto into loose ribbons near blue cheese. Fan out salami rounds near Gouda. Arrange soppressata slices near Cheddar.
- Fill in with Accompaniments (5 minutes): Scatter cornichons, artichoke hearts, and roasted red pepper strips in gaps. Place blackberries in small clusters. Tuck rosemary sprigs around edges. Sprinkle mixed nuts in remaining spaces, leaving a clear path for the web.
- Create the Spiderweb (8 minutes): Fill squeeze bottle with balsamic glaze. Start at center of board, squeeze a small dot, then draw straight lines outward (6-8 spokes). Draw curved lines between spokes from center outward, making each wider.
- Add the Spiders (3 minutes): Place 3-4 Kalamata olives on the web. For legs, cut thin strips of roasted red pepper and arrange around each olive.
- Finish with Crackers and Bread (2 minutes): Arrange crackers and baguette slices around outer edge of board, fanning them out in small clusters.
- Final Check (1 minute): Step back and fill any gaps with extra nuts or blackberries. Wipe away balsamic drips. Add a final rosemary sprig if needed.
Notes
Do not add the balsamic web more than 30 minutes before serving to prevent soaking into soft cheeses. Test balsamic glaze consistency on a plate first; it should flow like warm honey. For a vegan version, use vegan cheeses and plant-based meats. For a gluten-free version, use gluten-free crackers and bread.
