- 4 ears fresh corn on the cob
- 12 slices regular-cut bacon (hickory-smoked recommended)
- 3 tablespoons unsalted butter, softened
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- 1 tablespoon packed brown sugar
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- Optional garnishes: chopped fresh parsley, grated Parmesan cheese, lime juice
Instructions
- Preheat oven to 400°F (200°C). Line a rimmed baking sheet with aluminum foil and place a wire rack on top.
- Shuck corn, remove silk, rinse under cold water, and pat completely dry with paper towels.
- In a small bowl, mix softened butter, smoked paprika, garlic powder, brown sugar, salt, and black pepper until smooth.
- Spread seasoned butter evenly over each ear of corn using a pastry brush or spoon.
- Wrap each ear with 3 slices of bacon, starting at one end and overlapping slightly. Tuck ends under to secure.
- Place wrapped corn on the wire rack, leaving space between each ear.
- Bake for 20-25 minutes, until bacon is crispy and corn is tender. For extra crispiness, broil for 1-2 minutes at the end.
- Let rest for 2-3 minutes before serving. Garnish as desired.
Notes
Do not use thick-cut bacon; regular-cut crisps at the same rate corn cooks. Pat corn dry to avoid soggy bacon. Use a wire rack for even crisping. Watch the sugar to prevent burning. For grill method: cook at 375°F (190°C) for 15-20 minutes, turning every 5 minutes. For air fryer: cook at 375°F (190°C) for 12-15 minutes, flipping halfway.
