  • 12 slices regular-cut bacon (hickory-smoked recommended)
  • 3 tablespoons unsalted butter, softened
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 1 tablespoon packed brown sugar
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional garnishes: chopped fresh parsley, grated Parmesan cheese, lime juice

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with aluminum foil and place a wire rack on top.
  2. Shuck corn, remove silk, rinse under cold water, and pat completely dry with paper towels.
  3. In a small bowl, mix softened butter, smoked paprika, garlic powder, brown sugar, salt, and black pepper until smooth.
  4. Spread seasoned butter evenly over each ear of corn using a pastry brush or spoon.
  5. Wrap each ear with 3 slices of bacon, starting at one end and overlapping slightly. Tuck ends under to secure.
  6. Place wrapped corn on the wire rack, leaving space between each ear.
  7. Bake for 20-25 minutes, until bacon is crispy and corn is tender. For extra crispiness, broil for 1-2 minutes at the end.
  8. Let rest for 2-3 minutes before serving. Garnish as desired.

Notes

Do not use thick-cut bacon; regular-cut crisps at the same rate corn cooks. Pat corn dry to avoid soggy bacon. Use a wire rack for even crisping. Watch the sugar to prevent burning. For grill method: cook at 375°F (190°C) for 15-20 minutes, turning every 5 minutes. For air fryer: cook at 375°F (190°C) for 12-15 minutes, flipping halfway.
