Instructions
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
- Make the streusel: In a small bowl, combine ½ cup flour, ½ cup brown sugar, and ½ teaspoon cinnamon. Add cold butter cubes. Use a pastry cutter or fingertips to work the butter into the dry ingredients until the mixture resembles coarse sand with some pea-sized butter pieces. Stir in nuts if using. Refrigerate until needed.
- Prepare the cream cheese swirl: In a small bowl, beat softened cream cheese with ¼ cup sugar until smooth. Add egg yolk and ½ teaspoon vanilla, beat until fully combined. Set aside at room temperature.
- Mix dry ingredients: In a medium bowl, whisk together 1 ¾ cups flour, baking soda, baking powder, salt, pumpkin pie spice, cinnamon, and nutmeg. Set aside.
- Mix wet ingredients: In a larger bowl, whisk together pumpkin puree, both sugars, oil, eggs, and 1 teaspoon vanilla until smooth and glossy.
- Combine wet and dry: Add dry ingredients to wet mixture and fold gently with a rubber spatula until just combined. Do not overmix; a few small lumps are fine.
- Fill muffin cups: Using a cookie scoop, divide half the batter evenly among the 12 muffin cups, filling each about one-third full.
- Add cream cheese swirl: Drop a generous tablespoon of cream cheese mixture on top of the batter in each cup, keeping it centered.
- Top with remaining batter: Divide remaining batter over the cream cheese layer. It’s okay if some cream cheese peeks through.
- Create the swirl: Insert a toothpick or skewer into the batter and drag it through in a figure-eight pattern. Do 2-3 passes per muffin.
- Add streusel: Sprinkle chilled streusel generously over each muffin, pressing gently into the batter.
- Bake: Place muffin tin in preheated oven and bake for 18-22 minutes, until a toothpick inserted into the muffin part (not cream cheese) comes out clean. Tops should be golden and streusel toasted.
- Cool: Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For best results, use room temperature ingredients. Keep streusel cold until baking. Do not overmix batter. Let muffins cool completely before storing to keep streusel crunchy. Muffins taste even better the next day.
