  • 4 ounces hard salami (Genoa or soppressata)
  • 2 ounces capicola (optional)
  • 4 ounces sharp cheddar (aged white cheddar recommended)
  • 4 ounces soft brie or camembert
  • 2 ounces blue cheese or gorgonzola (optional)
  • 1/4 cup mixed olives (kalamata and green)
  • 1/4 cup cornichons or small pickles
  • 1/4 cup roasted red peppers (sliced into strips)
  • 1/4 cup honey or fig jam
  • 1/4 cup almonds or Marcona almonds (toasted and salted)
  • Small baguette or crackers (water crackers, rosemary crackers)
  • Fresh fruit (optional): red grapes or sliced apple (green apple recommended)

Instructions

  1. Prep your ingredients (5 minutes): Take the cheeses out of the refrigerator and let them sit at room temperature while you prepare everything else. Slice the baguette into thin rounds if using. Rinse the grapes and pat them dry. Slice the apple if using, and toss it with a little lemon juice to prevent browning.
  2. Place your bowls first (1 minute): Set your small bowls or ramekins on the board. I usually put them in the corners or along one edge. Fill one with olives, one with cornichons, one with fig jam or honey, and one with roasted red peppers. This creates anchors that you can build around.
  3. Add the cheeses (2 minutes): Place the brie wheel whole or cut into wedges. Slice the cheddar into thin triangles or cubes and arrange them in a small pile or fan shape. If using blue cheese, crumble a small pile near the cheddar. Space the cheeses out so they are not all clustered in one spot.
  4. Add the meats (2 minutes): Fold the prosciutto slices into loose ribbons or waves—do not lay them flat. Pile the salami slices in a small stack or fan them out. If using capicola, roll each slice into a small tube. Place the meats near the cheeses, but not overlapping too much.
  5. Fill in with accompaniments (3 minutes): Scatter the almonds in small clusters around the board. Add the grapes or apple slices in the gaps. Place the baguette slices or crackers in a small stack or fan. You want to fill in the empty spaces so the board looks full, but not crowded.
  6. Drizzle and garnish (1 minute): If using honey, drizzle a small amount over the brie or blue cheese. Sprinkle a little flaky sea salt over the cheddar if you want. Add a few fresh herbs like rosemary sprigs or thyme for color—this is optional but makes it look extra polished.
  7. Serve immediately: Place the board at the center of your coffee table or dining table. Let everyone dig in. No reheating, no fuss.
