Instructions

  1. Preheat oven to 375°F (190°C). Line a jelly roll pan (10×15 inches) with parchment paper and lightly grease it.
  2. Beat 4 large eggs and 3/4 cup sugar on high speed for about 5 minutes until pale, thick, and ribbons form.
  3. Gently mix in 1 teaspoon vanilla extract.
  4. Sift together 3/4 cup all-purpose flour and 1/4 teaspoon salt. Gradually fold into egg mixture gently with a rubber spatula.
  5. Divide batter evenly into four bowls. Add gel food coloring to each bowl (red, blue, yellow, green) and mix gently.
  6. Spoon thin lines or patches of each colored batter side by side into the prepared pan, creating swirls.
  7. Bake for 12-15 minutes until cake springs back lightly and a toothpick comes out clean.
  8. Immediately invert cake onto a powdered sugar-dusted kitchen towel, remove parchment, and roll cake up in the towel from the short end. Let cool completely rolled.
  9. Whip 1 cup heavy cream with 2 tablespoons powdered sugar and 1 teaspoon vanilla extract until soft peaks form.
  10. Unroll cooled cake, spread whipped cream evenly over surface leaving a small border, then gently reroll without the towel.
  11. Wrap cake in plastic wrap and refrigerate for at least 1 hour before slicing and serving.
