- 2 cups sweetened shredded coconut
- 1/2 cup condensed milk
- 1 teaspoon vanilla extract
- 2 large egg whites
- Pinch of salt
- 1 cup semi-sweet chocolate chips
- 1 teaspoon coconut oil (optional)
Instructions
- Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the sweetened shredded coconut, condensed milk, and vanilla extract. Mix until fully combined.
- In a separate bowl, beat the egg whites with a pinch of salt using a hand or stand mixer. Whip until soft peaks form.
- Gently fold the whipped egg whites into the coconut mixture, being careful not to deflate the egg whites.
- Using a cookie scoop or spoon, drop heaping tablespoons of the mixture onto the prepared baking sheet, spacing them about an inch apart.
- Bake for 20–25 minutes, or until the edges are golden brown.
- Remove from the oven and let the macaroons cool completely on a wire rack.
- In a microwave-safe bowl, melt the chocolate chips in 20-second intervals, stirring between each interval. Add a teaspoon of coconut oil if needed for smoother consistency.
- Once cool, dip the bottoms of each macaroon into the melted chocolate. Place them back on the wire rack to set.
- Once the chocolate has hardened, your macaroons are ready to enjoy!
Notes
Chill the mixture for 10–15 minutes if it feels too sticky to shape. Use parchment paper to prevent sticking and ensure easy cleanup.
