  • ½ cup packed light brown sugar (100 grams)
  • 2 large eggs, at room temperature
  • ½ cup vegetable oil (120 ml)
  • 1 cup buttermilk (240 ml), at room temperature
  • 2 teaspoons vanilla extract
  • ½ cup hot coffee (120 ml)
  • 1 cup unsalted butter (226 grams), softened
  • 3 ½ cups powdered sugar (420 grams), sifted
  • ¼ cup heavy cream (60 ml)
  • 2 teaspoons vanilla extract
  • ⅛ teaspoon salt
  • Extra white frosting (reserve about ½ cup)
  • Black sanding sugar or edible glitter (optional)
  • Small plastic spiders (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, black cocoa powder, baking powder, baking soda, and salt until no lumps remain.
  3. In a separate bowl, whisk together granulated sugar, brown sugar, eggs, vegetable oil, buttermilk, and vanilla extract until smooth and glossy.
  4. Pour wet mixture into dry mixture and stir gently with a spatula until just combined (a few streaks of flour are okay).
  5. Slowly pour in hot coffee while stirring gently until batter is thin and liquidy.
  6. Divide batter evenly among prepared liners, filling each about ⅔ full. Bake for 18-22 minutes, rotating pan halfway through, until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Let cupcakes cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. For the buttercream: Beat softened butter on medium speed for 2 minutes until creamy. Gradually add sifted powdered sugar, one cup at a time, beating on low. Add heavy cream, vanilla extract, and salt, then beat on medium-high for 3-4 minutes until light and fluffy.
  9. Reserve about ½ cup of frosting for web details. Fill a piping bag fitted with a round tip with remaining frosting.
  10. Pipe a generous swirl of frosting onto each cooled cupcake, starting from the outside and working inward.
  11. Transfer reserved frosting to a small piping bag with a tiny tip. Pipe 3-4 concentric circles on each frosted cupcake, starting from the center outward.
  12. Using a toothpick, drag lines from the center outward through the circles (like spokes on a wheel). Wipe toothpick clean between each drag.
  13. Optionally sprinkle with black sanding sugar or place a plastic spider on top. Refrigerate decorated cupcakes for 15 minutes to set frosting before serving.

Notes

The coffee enhances chocolate flavor without making cupcakes taste like coffee. Use decaf if serving kids. For best results, chill frosting if kitchen is warm before piping web pattern. Drag toothpick quickly and confidently for clean lines. Cupcakes taste even better the day after baking.
