Ingredients
- 1 ½ cups (180g) all-purpose flour
- ½ cup (50g) black cocoa powder
- 1 cup (200g) granulated sugar
- ½ cup (100g) light brown sugar, packed
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 2 large eggs, at room temperature
- 1 cup (240ml) buttermilk, at room temperature
- ½ cup (120ml) vegetable oil
- 2 teaspoons vanilla extract
- ½ cup (120ml) hot coffee
- 1 cup (2 sticks, 226g) unsalted butter, softened
- 3 ½ to 4 cups (420g to 480g) powdered sugar, sifted
- ¼ cup (60ml) wild blueberry reduction
- 2 to 4 tablespoons heavy cream or milk
- 1 teaspoon vanilla extract
- Pinch of salt
- ¼ teaspoon lemon juice or cream of tartar
Instructions
- Make the blueberry reduction: In a small saucepan, combine 1 ½ cups frozen wild blueberries, 2 tablespoons water, and 1 tablespoon sugar. Simmer over medium heat for 8-10 minutes until blueberries burst and mixture thickens. Strain through a fine-mesh strainer, pressing on solids. Cool completely.
- Preheat oven to 350°F (175°C). Line a muffin tin with 12-14 paper liners.
- In a large bowl, whisk together flour, black cocoa powder, granulated sugar, brown sugar, baking soda, baking powder, and salt.
- In a separate bowl, whisk together buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
- Pour wet ingredients into dry ingredients and mix until just combined. Add hot coffee and fold gently until incorporated. Batter will be thin.
- Divide batter evenly among liners, filling each ⅔ to ¾ full. Bake for 18-22 minutes, until a toothpick inserted comes out clean. Cool in pan 5 minutes, then transfer to wire rack to cool completely.
- Make the buttercream: Beat softened butter on medium speed for 2-3 minutes until pale and fluffy. Gradually add sifted powdered sugar, mixing on low. Add cooled blueberry reduction, vanilla, salt, and lemon juice or cream of tartar. Beat on medium-high for 3-4 minutes until vibrant purple. Adjust consistency with heavy cream if needed.
- Once cupcakes are completely cool, pipe or spread frosting on top. Optionally garnish with edible glitter or black cocoa powder.
Notes
Room temperature ingredients are crucial for best texture. Do not overmix batter. The toothpick test can be tricky due to dark color; look for wet batter, not just color. Frosting color may start murky; keep beating and add lemon juice/cream of tartar to brighten. Straining blueberries is essential to avoid skins. Cupcakes taste even better the next day.
