Instructions

  1. In a medium bowl, combine crushed shortbread cookies, melted butter, sugar, and a pinch of salt. Stir until the mixture resembles wet sand.
  2. Line a 12-cup mini muffin pan with paper liners. Spoon about 1 tablespoon of crumb mixture into each cup and press firmly to compact the crust.
  3. Place the pan in the freezer for 10 minutes to chill the crust.
  4. In a large bowl, beat softened cream cheese until creamy and smooth. Add sweetened condensed milk, lemon juice, lemon zest, and vanilla extract. Beat until well combined and fluffy.
  5. In a separate bowl, whip heavy cream until soft peaks form. Gently fold the whipped cream into the lemon mixture with a spatula.
  6. Remove the muffin pan from the freezer. Spoon or pipe the lemon filling evenly into each crust, filling to the top. Smooth the tops.
  7. Refrigerate the tartlets for at least 2 hours, or until the filling is firm and chilled through.
  8. Just before serving, garnish each tartlet with fresh berries, lemon zest, mint leaves, or a dusting of powdered sugar.
