  • 1/8 tsp ground cloves
  • 1 tsp vanilla extract

Instructions

  1. Brown the butter: Place 1/2 cup unsalted butter in a medium saucepan over medium heat. Stir frequently as it melts, foams, then darkens to a golden brown with a nutty aroma (about 5-7 minutes). Remove from heat immediately and pour into a heatproof bowl. Let cool slightly to warm but not hot.
  2. Mix wet ingredients: To the browned butter, whisk in 1/2 cup pure maple syrup and 1/2 cup brown sugar until combined. Add 2 large eggs, 1 cup pumpkin puree, and 1 tsp vanilla extract. Whisk gently until smooth and glossy.
  3. Combine dry ingredients: In a large bowl, sift together 1 3/4 cups all-purpose flour, 1 tsp baking soda, 1/2 tsp baking powder, 1/2 tsp salt, 1 tsp ground cinnamon, 1/2 tsp ground nutmeg, 1/4 tsp ground ginger, and 1/8 tsp ground cloves. Mix spices well.
  4. Fold wet into dry: Pour the wet mixture into the dry ingredients. Using a rubber spatula, fold gently until just combined. If using nuts or chocolate chips, fold them in now.
  5. Prepare pan and bake: Grease a 9×5-inch loaf pan lightly with butter or nonstick spray. Pour batter in and smooth the top. Bake at 350°F (175°C) for 50-60 minutes. Start checking at 50 minutes by inserting a toothpick into the center; if it comes out clean or with a few moist crumbs, it’s done.
