Description
This creamy dill cucumber salad is low-carb, ridiculously easy, and tastes like summer in a bowl. No complicated steps, no obscure ingredients—just the good stuff.

- 2 large English cucumbers (or 3 medium Persian cucumbers)
- 1 teaspoon salt (fine sea salt or kosher)
- 1/4 cup thinly sliced red onion
- 1/2 cup sour cream
- 2 tablespoons mayonnaise
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- Optional: 1 teaspoon white vinegar
Instructions
- Slice the cucumbers into thin rounds, about 1/8-inch thick. If using English cucumbers, no need to peel. If using waxed garden cucumbers, peel first.
- Place the slices in a large bowl and sprinkle with 1 teaspoon of salt. Toss gently to coat every piece. Let them sit for 15-20 minutes.
- Transfer the cucumbers to a colander and rinse briefly with cold water to remove excess salt. Then spread them on a clean kitchen towel or paper towels and pat dry.
- While the cucumbers are salting, soak the sliced red onion in a small bowl of cold water for 10 minutes. Drain and pat dry before adding.
- In a small bowl, whisk together the sour cream, mayonnaise, lemon juice, fresh dill, garlic powder, and black pepper. Taste and adjust. Optionally add white vinegar for extra tang.
- In a large bowl, toss the dried cucumber slices and red onion with the dressing. Use a rubber spatula to gently coat every slice. Do not overmix.
- For best flavor, cover and refrigerate for at least 30 minutes before serving.
- Right before serving, garnish with extra fresh dill and a crack of black pepper.
Notes
Don’t skip the salting step—it draws out excess water and prevents a watery dressing. Pat the cucumbers really dry after rinsing. Use garlic powder instead of fresh garlic to avoid overpowering the dill. This salad tastes even better after a few hours in the fridge.
