Description
A lighter, healthier version of classic buffalo chicken dip that’s creamy, spicy, and perfect for game day. Made with cottage cheese and Greek yogurt, it delivers all the indulgent flavor without the heavy calories.
Ingredients
- 1 cup low-fat cottage cheese
- 4 oz reduced-fat cream cheese, softened
- 1/2 cup plain Greek yogurt
- 1/2 cup Frank’s RedHot Original Cayenne Pepper Sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon smoked paprika (optional)
- 2 cups cooked, shredded chicken breast
- 1 cup shredded sharp cheddar cheese, divided
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons Greek yogurt or sour cream (for spiderweb design)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or small baking dish with cooking spray or olive oil.
- Blend the cottage cheese in a blender or food processor for about 30 seconds until completely smooth and creamy. Set aside.
- In a large mixing bowl, combine the blended cottage cheese, softened cream cheese, Greek yogurt, Frank’s RedHot, garlic powder, onion powder, and smoked paprika. Stir until well combined.
- Fold in the shredded chicken, 3/4 cup of the cheddar cheese, and all of the mozzarella. Reserve the remaining 1/4 cup of cheddar for the top. Mix until the chicken is evenly distributed.
- Pour the mixture into the greased baking dish and spread it out evenly. Sprinkle the reserved 1/4 cup of cheddar cheese over the top.
- Bake for 15-18 minutes until the dip is bubbly and the cheese on top is melted and lightly golden. For a browner top, broil for the last 1-2 minutes, watching closely.
- While the dip is baking, put the 2 tablespoons of Greek yogurt or sour cream into a small zip-top bag. Snip off a tiny corner. Once the dip comes out of the oven, pipe a small circle of yogurt in the center, then pipe concentric circles around it, spacing them about an inch apart. Use a toothpick or knife to drag lines from the center outward, creating a spiderweb effect.
- Let the dip rest for 5 minutes before serving to allow it to set.
Notes
For best results, use room temperature cream cheese and blend the cottage cheese until smooth. Do not overbake; the dip should be bubbly around the edges but still slightly jiggly in the center. The spiderweb design works best when applied immediately after baking. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days and reheated in the microwave or oven.
