  • 2 tablespoons all-purpose flour
  • ⅓ cup dark chocolate chips (60-70% cocoa)
  • 1 teaspoon coconut oil
  • ¼ cup crushed candy canes or peppermint candies (about 45 regular-sized candy canes)

Instructions

  1. Preheat your oven to 325°F (160°C). Line your 8×8 pan with parchment paper, leaving some overhang on two sides.
  2. Make the crust: In a medium bowl, combine the graham cracker crumbs, melted coconut oil, maple syrup, and salt. Stir until it looks like wet sand. Press this mixture firmly into the bottom of your prepared pan. Bake for 8 minutes, then set aside to cool slightly.
  3. While the crust cools, make the filling: In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth, about 2 minutes. Scrape down the sides. Add the Greek yogurt and sugar, and beat until combined. Do not overmix.
  4. Add the eggs one at a time, beating on low speed just until combined. Add the vanilla extract, peppermint extract, and flour. Mix on low until just combined. The batter should be smooth and thick.
  5. Pour the filling over the crust. Spread evenly to the edges. Give the pan a gentle tap on the counter to release air bubbles. Bake for 28-32 minutes, or until the edges are set but the center still jiggles slightly.
  6. Cool the cheesecake completely at room temperature (about 1 hour). Then transfer to the refrigerator and chill for at least 4 hours, or overnight.
  7. Once chilled, make the chocolate topping: Melt the dark chocolate chips and coconut oil together in a small saucepan over low heat, stirring constantly, or microwave in 20-second bursts. Let cool for 2 minutes, then drizzle over the chilled cheesecake.
  8. Sprinkle the crushed candy canes over the chocolate immediately. Gently press the pieces into the chocolate with your fingers.
