Description
This Lighter Fall Harvest Baked Brie Charcuterie Wreath brings together warm, melty baked brie with crisp apple slices, juicy pears, tart pomegranate arils, and crunchy nuts, all arranged in a gorgeous, shareable ring. It’s a festive, lighter appetizer that feels indulgent without the heavy aftermath.
Ingredients
- 1 (8-ounce) wheel of brie cheese (double or triple cream recommended)
- 1 tablespoon honey (plus more for drizzling)
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme leaves
- Pinch of flaky sea salt (like Maldon)
- 1 large apple (Honeycrisp or Fuji)
- 1 large pear (Bartlett or Bosc)
- 1/2 cup pomegranate arils
- 1/2 cup raw almonds
- 1/2 cup raw pecans
- 1/4 cup dried cranberries (unsweetened if possible)
- Fresh rosemary and thyme sprigs for garnish
- Whole grain crackers or seeded crackers (for serving, optional)
- Sliced baguette or gluten-free crostini (for serving, optional)
- Additional honey for drizzling (for serving, optional)
Instructions
- Preheat oven to 350°F (175°C). Let brie sit at room temperature for 15 minutes. Line a small baking sheet with parchment paper. Place brie in center. Score the top rind in a crosshatch pattern, about 1/4 inch deep.
- Drizzle brie with 1 tablespoon honey. Sprinkle chopped rosemary, thyme leaves, and a pinch of flaky sea salt evenly over the top.
- Bake brie for 12-15 minutes, until soft and slightly puffed but still holding its shape.
- While brie bakes, core and thinly slice apple and pear (about 1/4 inch thick). Measure out pomegranate arils, almonds, pecans, and dried cranberries.
- Let baked brie cool for 2-3 minutes. Carefully transfer to the center of a large platter or board.
- Arrange apple and pear slices in a ring around the brie, overlapping slightly. Scatter pomegranate arils, almonds, pecans, and dried cranberries around the fruit, filling gaps.
- Drizzle extra honey over the warm brie and fruit. Garnish with fresh rosemary and thyme sprigs. Serve immediately with crackers or baguette slices.
Notes
Don’t overbake the brie—watch closely for 12-15 minutes. Take fruit out of fridge 30 minutes before assembling for best flavor. Slice fruit just before serving to prevent browning; toss with lemon juice if prepping ahead. The wreath is best assembled and served immediately while brie is warm.
