Ingredients
- 4 cups whole milk
- 1/2 cup heavy cream
- 1/2 cup granulated sugar
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- Pinch of salt

Instructions
- In a small bowl, whisk together the cocoa powder, ground ginger, cinnamon, nutmeg, cloves, and salt. Set aside.
- Pour the whole milk and heavy cream into a medium saucepan. Heat over medium heat until hot but not boiling (small bubbles around the edges).
- Add the granulated sugar and whisk until dissolved. Slowly add the dry spice mixture, whisking constantly, until smooth and dark brown (about 2 minutes).
- Stir in the vanilla extract and semi-sweet chocolate chips (if using). Whisk until the chips are completely melted and the mixture is silky (about 1 minute).
- Taste and adjust sweetness or spices as desired.
- Reduce heat to low and keep warm for up to 30 minutes, stirring occasionally. Add a splash of milk if it thickens too much.
- While the hot chocolate warms, arrange the toppings in small bowls or on a tray: mini marshmallows, whipped cream, crushed gingerbread cookies, cinnamon sticks, chocolate shavings, crushed candy canes, caramel sauce, and pretzel sticks.
- Ladle the hot gingerbread hot chocolate into mugs. Let each person add their own toppings and enjoy.
Notes
For a dairy-free version, use oat milk and dairy-free whipped cream. For a spicy twist, add a pinch of cayenne pepper. For a minty version, swap vanilla extract for 1/2 teaspoon peppermint extract.
