  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • ¼ teaspoon ground cloves
  • ½ cup (115g) unsalted butter, softened
  • ½ cup (100g) brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 large egg yolk
  • ¾ cup (180g) pure pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and ground cloves. Set aside.
  3. In another bowl, cream together unsalted butter, brown sugar, and granulated sugar using a hand mixer or stand mixer until light and fluffy (about 2-3 minutes).
  4. Add egg yolk, pumpkin puree, and vanilla extract to the butter and sugar mixture. Mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Avoid overmixing.
  6. Fold in semi-sweet chocolate chips using a spatula.
  7. Using a cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 12-14 minutes, or until the edges are set but the centers still look slightly soft.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for 30 minutes if it feels too sticky to prevent spreading during baking. Use room temperature ingredients for better mixing.
