  • 1/2 cup (120ml) heavy cream
  • 2 tablespoons (30g) unsalted butter
  • 1 tablespoon corn syrup or honey
  • 1/2 teaspoon espresso powder (optional)
  • Pinch of salt
  • Whipped cream (optional, for topping)

Instructions

  1. Preheat oven to 325°F (163°C). Line the bottom of a 9-inch springform pan with parchment and lightly grease the sides.
  2. In a large mixing bowl, whisk together melted butter and 1 cup sugar until glossy. Add 2 eggs and 1 teaspoon vanilla extract, mixing until smooth.
  3. Sift in cocoa powder, flour, and salt. Stir just until combined. Spread the batter evenly in the prepared pan.
  4. Bake the brownie base for 18-20 minutes, until just set (a toothpick should come out with a few moist crumbs). Let cool slightly.
