Description

This rustic skillet peach cobbler features jammy, sweet peaches and a golden, crisp-edged topping. It’s an easy, forgiving dessert that comes together in minutes and tastes like summer in a cast iron pan.

  • 1/2 cup (1 stick) unsalted butter
  • 45 medium fresh peaches (about 4 cups sliced)
  • 1 cup granulated sugar, divided
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • Vanilla ice cream for serving

Instructions

  1. Preheat oven to 375°F (190°C). Place a 10-inch cast iron skillet in the oven while it preheats.
  2. Once preheated, carefully remove the hot skillet using oven mitts. Add the butter; it will melt immediately. Swirl to coat the bottom and sides. Set aside.
  3. In a large bowl, combine sliced peaches with 1/2 cup of the sugar and the optional cinnamon. Toss gently and let sit while making the batter.
  4. In a medium bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt. Make a well, pour in the milk and vanilla, and stir until just combined (a few lumps are fine). Do not overmix.
  5. Pour the batter over the melted butter in the hot skillet. Do not stir. Spoon the peach mixture evenly over the batter. Do not stir.
  6. Bake for 40-45 minutes, until the top is golden brown and the edges are bubbly. A toothpick inserted into the center of the topping should come out clean.
  7. Let cool on a wire rack for at least 15-20 minutes before serving.
  8. Serve warm, topped with a generous scoop of vanilla ice cream.

Notes

Do not overmix the batter. Use room temperature milk. Let the cobbler rest for 15-20 minutes before serving to allow the filling to thicken. If using frozen peaches, do not thaw them first; add directly to the sugar and cinnamon mixture and bake for an extra 5-10 minutes. If the top browns too quickly, tent loosely with foil.
