A quick and easy 30-minute chili made with lean ground turkey, pumpkin puree, black beans, and fire-roasted tomatoes. It’s velvety, smoky, and perfect for fall.

- 1 tablespoon olive oil
- 1 pound lean ground turkey (93/7 or 99/1)
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 medium red bell pepper, diced
- 1 can (15 oz) pumpkin puree (not pumpkin pie filling)
- 2 cans (15 oz each) black beans, drained and rinsed
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 cup low-sodium chicken broth
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
Instructions
- Heat the olive oil in a large Dutch oven over medium-high heat until shimmering.
- Add the ground turkey and cook for 5-7 minutes, breaking it apart, until no longer pink and browned.
- Add the diced onion and bell pepper; cook for 4-5 minutes until onion is translucent. Add garlic and cook 30 seconds until fragrant.
- Sprinkle chili powder, cumin, smoked paprika, oregano, cayenne (if using), salt, and pepper over the mixture. Stir constantly for 1 minute to bloom the spices.
- Pour in the fire-roasted tomatoes with their juices, pumpkin puree, and chicken broth. Stir until fully incorporated.
- Stir in the drained and rinsed black beans.
- Bring to a gentle boil, then reduce heat to low. Cover with lid slightly ajar and simmer for 15-20 minutes, stirring occasionally.
- Taste and adjust seasoning as needed.
- Serve hot with desired toppings.
Notes
Don’t skip blooming the spices for deeper flavor. Let chili rest 10-15 minutes before serving for best flavor. Chili thickens as it sits; add extra broth when reheating if needed.
