Description

A quick and easy 30-minute chili made with lean ground turkey, pumpkin puree, black beans, and fire-roasted tomatoes. It’s velvety, smoky, and perfect for fall.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground turkey (93/7 or 99/1)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 1 can (15 oz) pumpkin puree (not pumpkin pie filling)
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 cup low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large Dutch oven over medium-high heat until shimmering.
  2. Add the ground turkey and cook for 5-7 minutes, breaking it apart, until no longer pink and browned.
  3. Add the diced onion and bell pepper; cook for 4-5 minutes until onion is translucent. Add garlic and cook 30 seconds until fragrant.
  4. Sprinkle chili powder, cumin, smoked paprika, oregano, cayenne (if using), salt, and pepper over the mixture. Stir constantly for 1 minute to bloom the spices.
  5. Pour in the fire-roasted tomatoes with their juices, pumpkin puree, and chicken broth. Stir until fully incorporated.
  6. Stir in the drained and rinsed black beans.
  7. Bring to a gentle boil, then reduce heat to low. Cover with lid slightly ajar and simmer for 15-20 minutes, stirring occasionally.
  8. Taste and adjust seasoning as needed.
  9. Serve hot with desired toppings.

Notes

Don’t skip blooming the spices for deeper flavor. Let chili rest 10-15 minutes before serving for best flavor. Chili thickens as it sits; add extra broth when reheating if needed.
