These healthy pumpkin oat breakfast cookies are quick, wholesome, and genuinely delicious. Made with simple ingredients like rolled oats, pumpkin puree, and maple syrup, they are perfect for grab-and-go breakfasts or meal prep.

- 2 cups (180g) rolled oats
- 1 cup (245g) pumpkin puree (100% pure, not pumpkin pie filling)
- 1 large egg
- ¼ cup (60ml) maple syrup
- 2 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- 1 ½ teaspoons pumpkin pie spice
- ½ teaspoon cinnamon
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup (75g) raisins
- ¼ cup (20g) unsweetened shredded coconut (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper.
- In a large bowl, combine 1 cup of pumpkin puree, 1 large egg, ¼ cup of maple syrup, 2 tablespoons of melted coconut oil, and 1 teaspoon of vanilla extract. Whisk until smooth and well combined.
- Add 2 cups of rolled oats, 1 ½ teaspoons of pumpkin pie spice, ½ teaspoon of cinnamon, 1 teaspoon of baking powder, and ¼ teaspoon of salt to the bowl. Stir with a spatula until everything is evenly incorporated. The batter will be thick and sticky.
- Gently fold in ½ cup of raisins and ¼ cup of shredded coconut (if using). Make sure they are evenly distributed throughout the dough.
- Using a cookie scoop or a tablespoon, drop heaping portions of dough onto the prepared baking sheet. Leave about 2 inches between each cookie. Flatten each mound slightly with the back of the spoon or your fingers.
- Bake for 12 to 15 minutes, or until the edges are golden brown and the tops look set. For a crisper cookie, bake for the full 15 minutes.
- Let the cookies cool on the baking sheet for 5 minutes. After 5 minutes, transfer them to a wire rack to cool completely.
Notes
If your dough seems too wet, add an extra tablespoon or two of oats. If it seems too dry, add a splash of milk or water. The dough should be scoopable and hold its shape. These cookies freeze beautifully for up to 3 months.
