Healthy High-Protein Bento Box: Turkey & Hummus Lunch

Description

A quick and easy no-cook lunch packed with lean protein, fresh veggies, and creamy hummus. Perfect for meal prep and ready in under 15 minutes.


Ingredients

  • 46 ounces deli turkey (or rotisserie chicken)
  • 1/4 cup hummus
  • 1/2 large cucumber, sliced into spears or rounds
  • 1/2 bell pepper, sliced into strips
  • 56 cherry tomatoes, halved
  • 1 small handful baby carrots or snap peas
  • 12 ounces cheese cubes or slices (optional)
  • 1 hard-boiled egg
  • A few olives or pickle spears (optional)
  • 1 small apple, handful of grapes, or strawberry halves (optional)
  • Flaky sea salt, to taste
  • Black pepper, to taste
  • Everything bagel seasoning (optional)

Instructions

  1. Prep your protein: Slice deli turkey into bite-sized strips or roll into pinwheels. If using rotisserie chicken, shred with two forks. Divide evenly among containers (4-6 ounces per box).
  2. Hard-boil eggs: Place eggs in a saucepan, cover with cold water by 1 inch. Bring to a rolling boil, cover, turn off heat, and let sit for 10 minutes. Transfer to an ice bath for 5 minutes. Peel and slice each egg in half lengthwise. Place one egg per container.
  3. Wash and cut veggies: Rinse produce. Slice cucumber into spears or rounds. Cut bell peppers into 1/2-inch strips. Halve cherry tomatoes. Trim snap peas if using. Divide veggies evenly among containers.
  4. Portion hummus: Spoon about 1/4 cup hummus into a small compartment or silicone muffin cup to keep it separate.
  5. Add extras: Add cheese cubes, olives, pickles, or fresh fruit to remaining space.
  6. Season everything: Sprinkle flaky sea salt over cucumber and tomatoes. Add black pepper to egg. Optionally dust with everything bagel seasoning.
  7. Seal and store: Snap lids on tight. Store in refrigerator for up to 4 days. For longer storage, keep fruit separate and add fresh each morning.

Notes

Keep ingredients dry to prevent sogginess. Layer hummus in a separate compartment. Use thick-cut deli turkey for best texture. Batch cook eggs for the week. For kids, cut veggies into fun shapes with cookie cutters.
